Unreasonable Hospitality is the story of Will Guidara's journey in the restaurant business and how he and his team at Eleven Madison Park in New York City achieved the status of the World's Best Restaurant on the list of the 50 World's Best Restaurants for 2016 (theworlds50best.com.). In 2011, Eleven Madison Park was awarded three Michelin Stars.
Guidara emphasizes the extraordinarily thoughtful service Eleven Madison Park gave to its guests.
For example, if a guest's time on a parking meter was running out, a server would run out and "feed the meter."
When a couple wasn't able to go to Hawaii for their anniversary, the restaurant decorated a room to look like Hawaii, complete with sand.
When a couple who were eating their last meal before leaving New York said they regretted not trying hot dogs at a New York street vendor, the chef provided hot dogs for them to take to the airport.
Achieving Best Restaurant status during a recession also required sound financial management. Guidara describes creative ways the restaurant economized without sacrificing guest's experiences during the 2001 recession.
Building a team devoted to thoughtful service of guests required supporting that team by treating them well, committing to the shared goal of being the World's Best Restaurant, training, and hiring outstanding people - often who didn't have restaurant experience. Eleven Madison Park had team celebrations as milestones were achieved.
It also required allowing them to grow into positions of greater responsibility. For example, a server was eventually promoted to be the manager of the restaurant.
Guidara illustrates his lessons with personal experience stories that make reading Unreasonal Hospitality a pleasure.
